Vegetarian and Vegan Cooking Courses
Our courses are designed to be informal, relaxed and most of all fun!
Which is why our venue at Claremont Farm is a friendly working kitchen
rather than a traditional cookery school.
Whether you're just wanting to learn how to cook or add more recipes and
ideas to your repertoire, our aim is to ensure you have a truly memorable
experience!
All ingredients, a course recipe pack and the use of all equipment, aprons etc
are included in the price.
Please note: courses will only run with a minimum of 5 delegates.

Practical Workshops
Please arrive by 9.20 am so we can tempt you with coffee/tea and something
scrumptious to whet your appetite before you hit the kitchen. The day is divided
into 2 practical sessions following a demonstration or 2.
Several dishes are made to be eaten later but most of what we cook forms the
basis of lunch and we provide take-away containers so you can take your creations
with you to share at home and show off your culinary skills!.

Pickle Curry Spice *New for 2013
Say goodbye to ready made sauces and find out how to make dead easy and delicious
curries from scratch! You'll be amazed by all the different flavours that can be created
from just a few spices. Of course we'll give you some great basic recipes like the perfect
dahl, a spicy rice and tasty samosas, as well as super sides of chutneys and relishes. Special
curries will include tandoori paneer (haven't you always wanted to know how to use that?),
Gujerati cabbage and coconut and Mumbai potatoes. We'll also show you how to make your own
Indian breads and of course there wll be a lovely curry to take home and enjoy.


Pizza Pasta Pesto
You haven't lived if you've not made your own focaccia or met Mo the Pasta Queen!
Start off gently making chocolate biscotti and then create your own special pizzas
with seriously delicious toppings for lunch as well as mini focaccias to take home. At
break try delicious pumpkin seed and red pepper pestos, then create a few antipasti such
as artichoke stuffed peppers, sweet and sour aubergine and finally make your own fresh
pasta - not just spaghetti but also tortellini filled with sweet potato and rosemary.

The Mysterious Middle East
Based on our favourite cuisine,
which is packed full of vibrant flavours, and includes plenty of our top ingredients
such as sumac, za'atar, tahini and halloumi. As well as salads such kisir (like
tabbouleh but better) spinach with yoghurt & chilli, plus apricot, lentil & carrot,
there are some wonderful little mezze, a simple kuku (Persian fritatta) slow
cooked imam bayaldi (we can't ignore aubergine!) and a hearty chickpea soup
loaded with coriander and parsley. For dessert you'll make a sticky pistachio
baklava and as always there will be plenty to take home and a special cake to
start the day.

A Taste of Summer Veg
Let's face it, as a nation we're pretty poor at doing justice to vegetables so here's
your chance to find out how to make the most of our gorgeous summer produce. We start
off with a very yummy courgette cake on arrival, then make super-stuffed tomatoes,
courgette & feta fritters as well as artichoke and potato salad to take home. Our mid-
morning snack is muhummara (a North African dip of roasted peppers and pomegranate
molasses). Recipes for lunch include chilled avocado soup, broad bean and asparagus pasta,
Caponata (a Sicilian version of ratatouille) plus two very special salads - one with beetroot
and goats cheese and the other featuring cucumber and raspberries!

Just Bread
The art of making delicious bread. A full day course for a lifetime of enjoyment!
We start with a basic dough to create individual loaves and sesame plaits, then move
on to Turkish flat bread, followed by fougasse and a variety of rolls, including pain d'epi,
bread "shots" and poppy seed stars. Before lunch we'll also show you how to get the
best out of a bread machine if you haven't time to bake from scratch and also how
to create a very special white chocolate bread and butter pudding. Finally, you'll make
an enriched olive oil dough to take home and cook at your leisure.

Cakey Bakey Tart
Our first new course of 2012 - and it's been designed purely in response to your feedback!
Of course there will be a little bit of pastry making, but the main focus of the day will be on
divine (but simple!) home-made cakes and tarts such as lemon drizzle, chocolate
brownies, traybakes and many more. For lunch you'll be treated to our Vegi Table signature
savoury tart. Are you excited?

Luscious Legumes
We can't wait to show you the power of the pulse! Whether it's a credit-crunch
supper matched with ace anti-oxidant root vegetables, seriously healthy low- GI
salads or spookily yummy sticky pudds, you'll be amazed at what simple store
cupboard ingredients can create. The day includes Boston baked beans, green
lentil pate and spicy kidney bean wraps to take home as well as butter bean
stroganoff, edamame tagine and a speedy lasagne for lunch. We also squeeze in
a chickpea and spinach curry as well as a puy lentil salad. An ideal course for
new vegetarians who don't want to eat cheese at every meal.






A Taste of Winter Veg
Again we hope to inspire you to experiment with a huge range of recipes for traditional
British winter vegetables that very often just end up being boiled or mashed to death. As
well as side dishes such as cauliflower a la Greque, celeriac soup, Moroccan red cabbage,
kale and swede potato cakes and Brussel sprouts with apples, we'll also show you how to
make a perfect parsnip tarte tartin, a delicious carrot & cashew pate, slow baked onions
and a seriously hearty winter butternut squash stew. For dessert you'll have a seasonal
plum compote and a scrumptious sweet potato tart. As always there will be plenty to take
home to share, as well as one of our home-made cakes to start off the day!

World Tapas
We love travelling, so this course incorporates all our favourite little dishes from
around the world, ranging from Vietnam, Morocco, the Mediterranean, India,
Japan and even the USA. By the end of the day your palate with be dancing with
flavours!
Starting off with mini 'rolls' we'll make vegetarian sushi and rice paper wraps followed
by patatas a lo pobre and charmoula aubergine with tahini dressing. Then watch us
make a proper fritatta (that doesn't just taste of scrambled egg) as well as piroshki
pastries. Then for lunch you'll also make Asian guacamole, Thai 'Royal' cucumber,
spiced labneh balls, cherry tomato and butter bean salad as well as Jamaican jerk
sweet potatoes and Moroccan orange salad for dessert.

Short Day Courses
If you haven't time to indulge in a day course come and try one of our half day
courses where we cram loads of info and cooking practice and a
little bit of eating into only 3 or 4 hours.

10.00 am to 2.00pm. Maximum 7 places available.
Slicing and Dicing
Slicing and Dicing
A perfect introduction to knife skills - learn to slice and dice effortlessly, just like
the professionals (we promise!) as well as how to choose and sharpen your own
knives. Recipes include hearty Tuscan bean soup and seasonal fruit tarts
(lined with chocolate!) for a lunch time snack as well as spicy red rice salad and
a posh coleslaw with celeriac, fennel and red cabbage coleslaw to take home.
(PS. you'll love the super-speedy egg-free mayo too).

Mexican Magic
We're delighted that so many people seem to like (proper!)
Mexican food as much as we do. Yes, there are plenty of avocados, tortillas, beans and chillies
but we've found loads of different ways to make them delicious. Dishes to cook include:
Yucatan recardos with roasted vegetables, spicy tomato soup, a 'fiesta' salad, the ultimate
guacamole and a Mexican mango slice. Watch us make chilli corn bread and a red pepper
chipotle adobe. And you'll also get to take home the best quesadilla ever (sweet potato, corn
and black bean) as well as a green chilli. Our welcome dish is chocolate chilli brownies with
salted caramel pecans (very moreish!)
