Vegetarian and Vegan Cooking Courses

Where to start? Well in the beginning there were two really enthusiastic cooks called Mo and Sarah who loved showing people
how fabulous vegetarian food could be when created with a bit of TLC...
After years of catering as well as teaching at the renowned Cordon Vert School they decided to set up their own unique
vegetarian and vegan cookery days located on Claremont Farm.
They were delighted to see how popular the courses were, so after a couple of years they had to figure out how to expand the team.
They were very excited first of all to discover a Kitchen Fairy in the guise of Janice....she is truly indispensable.
And the next welcome surprise was to find Lee and Craig who were desperate to find a weekend outlet for their culinary talents,
which were in danger of becoming buried thanks to full time work in IT.
Now Mo and Sarah have taken a bit of a back seat and happily handed over management and operations
to ‘the boys’ so that Vegi-Table can continue to provide wonderful cookery experiences and memories.
Introducing the Vegi-Table team...
Lee:
Many moons ago Lee and Sarah ran two cafes together. Given they had only worked in marketing previously it was astonishing they were so successful.
Perhaps it was because their food was so good?
Lee sensibly went back to a proper job and wore a suit again (how nice it was not to smell of chips), but he remained a loss to the culinary world...until he came to Vegi-Table.
The smooth running of every course is thanks to Lee’s super planning and even when there are occasional hitches
you’ll never know, because he is always smiling.
Craig:
Another important cafe member from catering days, best known for his charming front of house skills
- and making sure life isn’t taken too seriously.
What nobody knew then however was what a brilliant cook – and baker -Craig was too.
His cakes are legendary (as are his pilafs – rare combo!)
so now he is spending more time at Vegi-Table as a tutor for Cakey Bakey Tart and developing new recipes.
Amazing how he finds the energy to work full time in banking too, as well as nurturing an ever expanding allotment.
Mo:

Well it was all Mo’s idea in the first place!
A
s a ‘local’ girl she was instinctively drawn to the beauty of the Wirral countryside for a base.
So looking out over 250 acres devoted to fruit and veg, Claremont Farm seemed the perfect venue for sharing her passion for local produce.
Mo’s particular areas of interest include dairy-free cookery (best vegan chef you’ll find in the North)
as well as hot and spicy seasonings (especially smoked chillies) plus an astounding array of home-baked breads.
Sarah:

Sarah loves the sunny flavours of the Mediterranean so much she moved to the South of France
(or perhaps it was the weather?)
Middle Eastern food is her absolute favourite, and she would love to have worked with Ottolenghi.
Luckily she makes an appearance when she can and still helps with the development of new recipes
and as well as our newsletter.
Janice:
Aka ‘Kitchen Fairy’. From the moment she brought her husband on one of our courses and popped over to the sink
to help wash up she was hooked (or should one say kidnapped?)
It’s impossible now to remember what life was like without her.
And it’s not just the team that appreciates her .... students’ pots and pans are whipped away and washed in a flash,
so we hope no one steals her! As a lifelong artist

Lyn:

We are delighted to welcome Lyn Weller as our first guest tutor for Pickle Curry Spice.
Formerly the Principal of the Vegetarian Society’s Cordon Vert School, she trained both Mo and Sarah.
Her passion for delicious, healthy food and commitment to vegetarianism led her to a complete career change from chartered accountancy
and she believes there are no limits to how varied and exciting vegetarian food can be.
